4 Quick & Comforting Meals

When you're in a pinch and crave something hearty, try these tried and true recipes!

Mini Pizzas

Mini Pizzas

Ingredients

English muffins
Pizza sauce or tomato paste (I’ve used spaghetti sauce in a pinch, but it’s more watery than sauce or paste)
Mozzarella cheese (or use a combination cheese)
Toppings of your choice: broccoli, pepperoni, onion, olives, etc.
Seasonings: Italian seasoning, garlic powder

Methods / Instructions

1. Put your muffin or muffins on a baking sheet
2. Apply a layer of tomato sauce or paste to your muffin
3. Sprinkle cheese on top
4. Add desired toppings and seasonings
5. Place your baking sheet with muffins in the oven and broil for about three minutes or until cheese is bubbling

Serving Size

As many as you want! One muffin is filling, especially if paired with a small salad, but if you’re hungry go for two.
